Loach Soup

   Loach tastes more pleasant in autumn, so it is called chuo (autumn fish in Korean).
   Loach soup is one of traditional dishes much favoured by the Koreans for its delicious taste and high nutritive value.
   It was used for recuperating weak persons and promoting the growth of children.
   In the Kaesong area, the soup prepared by boiling loach together with bean curd and chilli pepper was counted best.
