Kaesong

Phyonsu

   It is a dumpling made by stuffing thin batter of wheat flour dough with meat and vegetables and boiling it in soup.
   It is named so, because it is shaped broad and flat and simmered in stock.
   The dish made in Kaesong has long been famous, and it was usually prepared as a special dish for lunar New Year’s Day.
   It was also eaten in hot summer to cool the heated body.
   The locals in Kaesong stuffed the dumplings with beef, pork, chicken, and vegetables.
   What was characteristic was that food was round in shape.
