Jelly noodle served in soybean soup

   Tadpole-shaped corn noodles were another favourite dish in the Phyongan Provincial area.
   Changsong, Sakju, Thaechon, Pyoktong, Nyongbyon and Uiju in the area were famous corn producers of the country, so the locals widely used corn in preparing noodles, jelly, cake and other foods.
   Fresh green corn is milled and sifted to settle dregs. After removing supernatant liquid, dregs were poured little by little into a pot to make jelly.
   The jelly was put into a mould and pressed down to go through the holes in its bottom. Then it got cold to be tadpole-shaped noodles. After draining on a wicker tray, the noodles were served in refreshing kimchi juice or sesame soup.
   The food was called either noodles or jelly depending on the size of the holes in the mould.
