Mung bean pancake

   Mung-bean pancake is made by frying mung-beans milled in water or wet dough of mung-bean flour.
   In the past it was the custom to prepare mung-bean pancakes for the wedding and other celebratory feasts as well as for memorial services. The locals in Phyongan Province took it for pride to pile up pancakes high on the wedding table.
   Mung-bean pancakes were also prepared for regular meals as well as on special occasions.
   The recipes for the dish differed in regions. In Phyongan Province, including Pyongyang, it was fried together with vegetables and pork slices, which was known as a local specialty for its distinctive colour and delicious taste.
   The mung-bean pancake of Phyongan Province was three times as big and two times as thick as those of other provinces. It can be said to be a food which represents the frugal, open-hearted and daring character of the locals.
