Taedong River mullet soup

   From olden times the locals in Pyongyang boasted about the Taedong River mullet soup, a specialty of Pyongyang.
   They regarded serving the mullet soup to the guests of honour as part of their traditional etiquette. And visitors to Pyongyang thought that they were accorded warm hospitality only after they were served with the mullet soup.
   The stock is important in judging the taste of the mullet soup.
   Pyongyangites knew through their experience of dietary life that the mullet soup tasted unique when fresh mullet caught in the Taedong River was cut into chops and cooked in cold water with pepper corns wrapped in cloth. When the soup was fully boiled, yellow oil floated on the surface and the soup tasted sweet and delicious.
