Elm Powder Noodles
The noodles are one of popular dishes in Jagang Province.
They are also called Kanggye noodles, as it is a special food in Kanggye and Manpho areas.
They are made by mixing corn or buckwheat flours with elm powder, kneading them with hot water and squeezing them.
Elm powder is made by peeling off elm roots and drying and grinding them.
